Dry Aged Striped Bass 🐟

This fish means a lot to me. For two consecutive summers I’ve been fishing outside of my house trying to catch a “keeper” striped bass without success – I’m either extremely unlucky or terrible at fishing. On my last day of fishing before the season ended, I finally managed to catch this fish and I was ecstatic!

This dish reinforced my belief that dry aged fish is in a league of its own. I actually think fish benefits more from the dry aging process than beef does. The flavor is concentrated with better texture… but honestly it’s all about the skin. It’s like the crispiest potato chip, that completely shatters under your knife. I hope it becomes more popular in the culinary world so that more people can try it.
